Breakfast Sausage Sweet Potato Hash

1 pkg Mulay’s Breakfast Sausage Links cooked and sliced into 1” pieces (can use Chorizo too!)
2 sweet potatoes (peeled, cut into 1” cubes, boil apx 12 min until just tender)
¼ c olive oil
1 onion, diced
2 garlic cloves, minced
1 Jalapeño, diced -(sub½ Green pepper)
1 cup kale, chopped course
Salt and Pepper to taste
Directions
Lightly coat a large sauté pan with 2 T of oil, over medium heat and cook the sausage, occasionally stirring, until almost done, apx. 5 minutes, remove from heat, cool and cut. (Quick step – use leftover pre-cooked sausages!) Add chopped onion - cook, stirring often, until soft. Add green peppers, jalapeños and garlic, stir until incorporated, then add cooked sweet potatoes and mix well. Cover, reduce heat and simmer, until hot 8-10 minutes. Add Kale, mix well cook another 2 min. Serve with eggs for breakfast or garden salad for lunch or dinner.
