A tasty Mulay's take on the traditional Irish Shepherd's Pie. We have substituted Mulay's Bangers for the traditional lamb. Feel free to use any of our sausages to make this recipe your own!
Ingredients
3lbs Yukon Gold Potatoes, peeled and cubed
2 Cloves Garlic, peeled
1 cup Milk (or your favorite milk alternative
3TB Irish Butter, room temp
1 cup Cheddar Cheese, shredded
Sprigs of Rosemary and Thyme

2 packages Mulay’s Bangers
3TB EVOO
2 cups Leeks, chopped
2 cups Carrots, chopped
1 cup celery, diced
1TB Garlic, minced
3TB Tomato Paste
2 cups Beef Stock
1 cup Red Cooking Wine
1TB Worcestershire
2 Bay Leaves
Sprigs of Thyme and Rosemary
1 cup Peas, fresh or frozen
1 cup corn, frozen
Salt and Pepper

Directions
Prepare The Stew
Heat 1TB of EVOO in large pot
Remove the casing from the Mulay’s Bangers and add sausage to pot
Brown sausage in pot, then place in a bowl to use later
Heat remaining 2TB EVOO in pot
Add leeks, carrots and celery and cook over medium until soft
Add garlic and a pinch of salt to vegetable mixture and stir until fragrant (about 1 minute)
Add tomato paste to pot and mix with vegetables
Add red cooking wine, making sure to scrape any bits of bottom of pan
Return the cooked Mulay’s Bangers to pot
Stir in the beef stock, Worcestershire, bay leaves, rosemary and thyme
Bring stew to a boil, reduce and simmer for 20 minutes
Remove from heat
Stir in peas and carrots
Let cool
Mashed Potatoes Topper
Place potatoes in pot and cover with water
Toss in herbs, garlic and a 1-2tsp of salt
Bring water to boil, lower heat and simmer for about 15minutes
Meanwhile, warm 1 cup milk
Drain potatoes and then add warm milk, butter, cheese, and a pinch of salt and pepper
Mash or use a hand mixer to create mashed potatoes topping (let cool before assembling)
Assemble The Pie
Preheat oven to 400°
Lightly butter a 13x9 baking dish
Spoon in the stew mixture
Top with the mashed potatoes
Bake for 20-25min
