Classic Italian Tartine

1 Loaf fresh Sourdough bread
1 pint baby eggplants, sliced into ¼” think pieces (lengthwise)
3-4 ripe tomatoes, cut into ¼-½” rounds
Olive oil, salt & pepper
Roasted Tomato Hummus (pick your favorite)
Turn oven to 350° F. While warming slice tomatoes and eggplant drizzle both with olive oil, salt & pepper. Spread out on individual sheet pans and place in the oven for 40-50 min until tomatoes are slightly candied and eggplant are cooked through. Taste the eggplant if slightly bitter throw into a sauté pan on high heat with olive oil and a little bit of salt.
20 min before vegetables are done add the links to the oven, or you can cook them in a covered pan with a little water for 12 min on medium high.
Prepare your bread by cutting into ½ -1” thick slices, lightly oil or butter, and toast. Once done assembly by thickly spreading the tomato hummus then laying out the roasted tomatoes and eggplant, top with sausage and serve.
