Ingredients

6 oz Mulay’s Chorizo
4 cups crusty, stale bread - cubed
¼ cup extra virgin olive oil
6 cloves garlic - peeled and sliced
½ tsp smoked paprika
1 tsp cumin
½ tsp ground red pepper
4 cups chicken stock
½ tsp crushed red pepper (for topping)
sea salt and pepper
4 eggs
1 avocado
Pickled Cabbage (for topper)
Directions
Add olive oil to large pot over medium heat.
Add garlic to pot and saute for about 2 minutes.
Add Mulay’s Chorizo, breaking up as you brown.
After about 6-8 minutes, add bread, smoked paprika, cumin and ground red pepper.
Stir to make sure you coat bread fully.
Add stock and increase temperature to high.
Once pot starts to boil, reduce heat and simmer for 10-12 minutes.
Salt and pepper to taste.
Add eggs, gently to the mixture.
Cover and simmer for about 8 minutes.
Serve in bowls and top with poached egg, crushed red pepper, avocado and picked cabbage.
